About This Expression

Bollinger Special Cuvée Brut is an iconic, aristocratic champagne celebrated globally for its distinctive, full-bodied richness, vinous complexity, and unwavering commitment to traditional artisanal methods. Founded in 1829 in the grand cru village of Aÿ by Hennequin de Villermont, Paul Renaudin, and Joseph Bollinger, the house achieved legendary status under Madame Lily Bollinger, who steered the brand through World War II with unyielding standards. Special Cuvée represents the absolute pinnacle of non-vintage champagne blending, renowned for its dominant proportion of Pinot Noir and extensive barrel fermentation.

Situated in Aÿ in the Vallée de la Marne, Bollinger controls some of the most prestigious Grand Cru and Premier Cru vineyards in Champagne, supplying more than sixty percent of its own grape needs. Pinot Noir is the undisputed pillar of the Bollinger style, providing muscular structure, aromatic depth, and incredible aging potential. Special Cuvée is composed of approximately 60% Pinot Noir, 25% Chardonnay, and 15% Meunier, with over eighty-five percent of the fruit sourced exclusively from Grand and Premier Crus.

What sets Bollinger apart from virtually all other major houses is its dedication to oak fermentation and reserve wine aging. Bollinger maintains its own resident cooper to tend over four thousand ancient oak barrels where base wines are fermented. Furthermore, Special Cuvée incorporates a massive proportion of reserve wines—many aged up to fifteen years in individual glass magnums under cork. The wine matures on its lees for more than three full years—more than double the legal minimum—inside Bollinger's cool chalk cellars in Aÿ.

Poured into a glass, Special Cuvée displays a rich, deep golden hue with an exceptionally fine, velvety perlage. The nose is intoxicatingly complex, filled with aromas of baked apple, toasted brioche, walnut, marzipan, ripe peach, and subtle wood spice. On the palate, it delivers an opulent, vinous texture with remarkable structure, balancing flavors of pear, roasted almond, pastry dough, and subtle ginger with fresh citrus acidity, culminating in a long, dry, and immensely satisfying finish.

Bollinger Special Cuvée should be served between ten and twelve degrees Celsius in a tulip glass. It is an exceptional dining champagne, pairing magnificently with roasted poultry, grilled seafood, venison, aged parmesan, or sushi.

This bottle is an absolute must-have for champagne purists who love rich, oak-influenced, and Pinot Noir-driven sparkling wines. It makes an outstanding gift for connoisseurs and an essential luxury staple for any discerning cellar.

Bollinger's commitment to fermenting base wines in ancient oak barrels and utilizing reserve wines aged in magnums gives Special Cuvée an unmistakable vinous richness and biscuity depth. Composed predominantly of Grand and Premier Cru Pinot Noir, it delivers an opulent, full-bodied sparkling experience that pairs sublimely with roasted game birds, grilled salmon, aged parmesan, or Iberico ham.
