About This Expression

Hakushu 12 Year Old Single Malt Japanese Whisky is an invigorating, verdant masterpiece affectionately known as the "Mountain Forest Single Malt." Founded in 1973 by Keizo Saji—Suntory's second master blender and son of founder Shinjiro Torii—Hakushu was built to commemorate the fiftieth anniversary of Suntory's whisky making. Situated high on the slopes of Mount Kaikomagatake in the Southern Japanese Alps, Hakushu is one of the highest-elevation distilleries in the world, surrounded by lush alpine forests and crystal-clear mountain streams.

The terroir of Hakushu is fundamental to its crisp, herbal, and gently smoky character. The distillery utilizes exceptionally soft, pristine water filtered naturally through ancient granite rock layers of the Japanese Alps over decades of snowmelt. The high altitude and cool mountain microclimate foster slow, unhurried fermentation in traditional wooden washbacks. Hakushu operates an array of distinct pot still shapes, utilizing direct-fire distillation to create a crisp, aromatic new make spirit imbued with vibrant green botanical notes, crisp citrus, and delicate esters.

Hakushu 12 Year Old is crafted from lightly peated malted barley, adding a delicate veil of crisp wood smoke that harmonizes with the distillery's signature herbal character. The single malt matures for twelve full years in a combination of American white oak ex-bourbon casks, European oak sherry casks, and hogsheads housed in deep forest warehouses where the clean mountain air and seasonal temperature shifts nurture the spirit to peak maturity without heavy woodiness.

Bottled at 43% alcohol by volume (86 proof), Hakushu 12 pours a sparkling, pale champagne gold. The nose is breathtakingly fresh and crisp, evoking a walk through a pine forest with aromas of green apple, fresh mint, pine needles, cucumber, green tea, and a subtle wisp of herbal smoke. On the palate, the whisky is clean, refreshing, and beautifully layered, offering flavors of sweet pear, crisp kiwi, citrus zest, toasted oak, and delicate barley, concluding in a long, dry, and invigorating finish accented by cooling mint and gentle peat smoke.

Hakushu 12 is sublime when enjoyed neat in a tulip glass, but it is equally legendary for crafting what is widely regarded as the ultimate Japanese Highball. Served over carved ice with chilled sparkling water and a fresh slapped mint leaf, it delivers an electrifyingly refreshing tasting experience that pairs brilliantly with grilled yakitori, fresh seafood, and alpine herbal dishes.

This bottle is a prized acquisition for connoisseurs of Japanese single malts, an impressive gift for discerning whisky enthusiasts, and an essential pillar of any comprehensive world whisky collection. It stands as a brilliant tribute to Japan's majestic alpine wilderness.

Enjoyed neat or with a single splash of cold spring water, Hakushu 12 Year Old evokes the serene ambiance of an ancient Japanese alpine forest. The light peat smoke is never harsh or medicinal; instead, it weaves gracefully through crisp green herbal notes of pine needle, cucumber, fresh mint, and green tea. It is an extraordinary pairing for lightly seasoned grilled meats, yakitori, fresh oysters, or mountain vegetable tempura, offering an invigorating, palate-cleansing finish that lingers with herbal sweetness.
