Highland Park 12 Year Old Single Malt Scotch Whisky, titled "Viking Honour," is a legendary single malt that captures the wild, windswept spirit of the Orkney Islands. Located in Kirkwall on the northern archipelago of Orkney, Highland Park is Scotland's northernmost distillery, founded in 1798 by Magnus Eunson, a legendary illicit distiller and direct descendant of Viking settlers. Highland Park is celebrated globally for its harmonious balance of gentle heather-honey peat smoke, rich sherry sweetness, and complex malt character that defies simple regional categorization.
The extreme climate of Orkney—treeless, gale-swept islands where ocean winds keep temperatures cool and consistent year-round—creates a uniquely gentle maturation environment. Highland Park is one of the very few distilleries that still malts a portion of its own barley on traditional stone floors. The green malt is kilned over peat cut by hand from the nearby Hobbister Moor. Highland Park 12 is crafted using mineral-rich water drawn from the Cattie Maggie springs. After distillation in tall copper pot stills, the spirit is filled predominantly into first-fill and refill European and American oak casks seasoned with Spanish Oloroso sherry. The whisky slumbers for twelve full years in damp Orcadian dunnage warehouses, where the cool, steady climate promotes slow, gentle wood extraction, allowing the floral peat, rich sherry fruit, and sweet malt to marry seamlessly over time without aggressive oakiness.
Bottled at 43% alcohol by volume (86 proof) with zero artificial caramel coloring, Highland Park 12 pours a glowing, natural amber gold. The aroma is enticing, featuring sweet heather honey, sun-dried raisins, orange peel, and a delicate wisp of aromatic peat smoke. On the palate, it delivers a wonderfully balanced texture filled with notes of Seville orange marmalade, rich fruitcake, dark chocolate, toasted malt, and gentle peat embers, resolving into a long, slightly sweet, and aromatic finish that leaves a clean, satisfying dryness.
