Among the smallest stills in Scotland, their compact size and unique shape maximize contact between alcohol vapor and copper, refining the spirit and capturing only the richest, heaviest, and most ester-laden fractions of the distillate. The distillery sources Spanish oak from the forests of northern Spain, crafts the casks in cooperages in Jerez, and seasons them with dry Oloroso sherry for up to eighteen months before transporting them to Speyside. The new make spirit matures inside these seasoned European oak sherry butts and hogsheads for twelve full years.
